This colorful salad is an ideal side for BBQ fare, such as hot dogs or veggie burgers. Try varying the herbs--sometimes, I'll use fresh parsley or cilantro.
Kernels from 4 medium ears fresh corn (about 3 1/2 cups)
2 medium avocados, diced
1 cup cherry tomatoes, halved
1/4 cup finely chopped or chiffonaded fresh basil leaves
2 Tbsp extra virgin olive oil
1- 1/2 Tbsp strained fresh lime juice (about 1 lime)
1 Tbsp white or golden balsamic vinegar
1/2 tsp kosher or sea salt
Fresh-ground black pepper to taste
- Add all of the ingredients to a medium-large bowl, and toss together with tongs. Serve immediately.
